This easy chicken fried rice recipe will give you a complete satisfying meal for lunch or dinner. And i am sure you would love this super combination of long grain basmati rice, chicken and green onions.
This is a restaurant style Chinese chicken fried rice recipe that you can make at the comfort of your kitchen with very less ingredients.
In Chicken fried rice recipe you can add different types of vegetables like carrot, peas, cauliflower and mushrooms to make it more nutritious. I haven't used them here in this recipe. You can use them while making it.
What is fried rice
Fried rice is a Chinese stir fry made with rice particularly long grain rice like basmati rice or jasmine rice. Scrambled eggs and veggies are added along with some protein like shrimps, Chicken or prawns. Traditionally fried rice is cooked in a Chinese wok in high flame.
Rice for chicken fried rice recipe
Fried rice is a dish to repurpose leftover rice. The recipe goes well with a completely cold rice. Freshly cooked rice will not give you the desired texture. Try to use leftover rice or if cooked fresh rice then cool them completely and keep refrigerated for 15 minutes before using.
Long grain basmati rice is my first choice for making fried rice at home. While cooking the rice keep it around 90% done and then drain and spread to cool down completely. You can even use one teaspoon oil while cooking the rice with water. This will help to keep the rice seperated from each other. Other varieties of rice or regular white rice can also be used for making the recipe. But keep them completely cool before stir fry.
You can also use this procedure to make chicken triple rice as well.
Chicken for fried rice
You can use either Chicken breast or leg boneless for fried rice recipe. In restaurants, chicken breast pieces ate used to make the recipe. And they use boiled chicken pieces in their fried rice recipe not a saute or fried chicken pieces. Those chicken pieces are very soft and make an excellent combination with the rice. I personally love boiled chicken in my fried rice recipe.
Cut the chicken breast into strips and apply some corn flour and a small amount of beaten egg and mix well to coat them evenly. Heat water with a pinch of salt and boil them till done. Remove and cool down. Cut them into small bite size pieces.
Egg and corn flour helps to keep the chicken pieces moist from inside. And they become soft as well.
In place of chicken you can use shrimps, prawns and any other protein for the recipe.

Variations
Add schezwan sauce and stir fry to make a spicy chicken fried rice. Instead of schezwan sauce you can use green chili as well to make it a spicy fried rice.
Schezwan Chicken fried rice recipe is very popular with young crowds and it gives the fried rice a new heights. Before removing the fried rice, just add 1 or 1/2 teaspoon schezwan sauce and stir fry for one minute to mix evenly with the rice. Your schezwan chicken fried rice is ready to serve.
Burnt garlic fried rice is a another popular version of this fried rice recipe where garlic are fried to burn to give a smoky garlic flavour.
What to serve with chicken fried rice
There are few gravy which goes well with this recipe. My favorite one is Chicken lollipop gravy. It make a delicious combination with fried rice. Others you can try are Chilli chicken gravy or exotic vegetables in hot garlic sauce.
Steps to make the recipe
1. Soaked the basmati rice in water for 15 to 25 minutes before boiling them. Add a small pinch of salt and little oil in the water while boiling. Cook the rice till 90% done.
2. Drain and spread them in a tray to cool down completely. After that keep refrigerated for 5 to 7 minutes.
3. Meantime cut the chicken breast into strips and apply small amount of corn flour and some whisked eggs. Heat water and boil the chicken till cooked completely.
4. Cut the chicken pieces into small bite size pieces after cooling.
5. Heat one teaspoon oil in a wok or a non stick pan and add the remaining whisked eggs.
6. Scramble and cook the egg completely till farm and soft. Keep them aside on the pan.
7. Pour half teaspoon oil and fry the chopped ginger, garlic and while onions till light brown. Add the boiled chicken pieces and stir to mix everything nicely.
8. Add the boiled rice over them and give a nice mix. Pour dark soya sauce, salt and white pepper powder.
9. Stir continuously so that the soya sauce mix nicely with all of the rice.
10. Pour the chopped green scallions (spring onions) over the rice and mix to incorporate nicely.
11. Taste the seasoning and remove the chicken fried rice to serve hot.
You can prepare the ingredients in advance. Just boil the rice, saute or boil the chicken and keep refrigerated. When ready for dinner just mix everything and stir fry. So easy and simple.
For making best Chicken fried rice
- Use completely cool rice. If made fresh rice apply some oil and spread to cool down. Keep refrigerated for 15 minutes before stir fry.
- Use fresh chopped ginger and white pepper powder for a restaurant style taste.
- Don't pour soya sauce over chicken, egg and vegetables. Only over the rice and stir to mix everything nicely.

Ingredients
- 1 1/2 cup basmati rice
- 1 piece chicken breast
- 2 eggs
- 1/2 teaspoon dark soya sauce
- 1 teaspoon white pepper powder
- 1/2 teaspoon salt
- 1/2 teaspoon sesame oil (optional)
- 1/2 teaspoon chopped ginger
- 1/2 teaspoon chopped garlic
- 1/2 teaspoon chopped onion (optional)
- 1/2 teaspoon corn flour
- 2 teaspoon cooking oil
- Small handful of chopped spring onions
How to make the recipe
- Boil water in a deep vessel pan and add the soaked basmati rice. Pour one teaspoon oil and little salt. Cook them till 90% done.
- Drain and spread the rice to cool down completely. You can refrigerated the rice for 15 minutes before stir frying.
- In the meantime cut the chicken into strips and apply, corn flour and beaten egg. Boil them till done adding a small pinch of salt in water.
- Cut the boiled chicken strips into small bite size pieces.
- You can even saute or fry them after applying some salt and pepper.
Making Chicken fried rice
- Heat one teaspoon oil in a pan or wok in high flame and pour the beaten egg.
- Scramble and cook the egg completely till farm Keep them on a side of the pan.
- Pour half teaspoon oil and fry chopped ginger, garlic and onions till light brown.
- Add the boiled chicken pieces and give a fine stir to mix everything nicely.
- Add the rice and stir to incorporate. Pour soya sauce, salt and white pepper powder.
- Now stir continuously to mix the soya sauce with all the rice.
- Pour some freshly chopped green scallions (spring onions) over the rice and mix.
- Taste the seasoning and remove the chicken fried rice to serve hot.
