What is chicken ghee roast
Chicken ghee roast is a spice coated dry chicken preparation where bite size chicken pieces are cooked and roasted in a spiced chilly based masala paste with ghee. This is hugely popular in Mangalore and traditionally prepared in many Shetty's luch home.
This chilly based masala paste is known as ghee roast masala. And can be used to make other popular recipes like Prawns ghee roast and mutton ghee roast. You can even use it with paneer to make paneer ghee roast.
Ingredients for chicken ghee roast
Chicken : popular choice is chicken leg boneless pieces for the recipe. But can be used with chicken breasts and bone in chicken.
Curry leaves : The star ingredient of the recipe, you can not leave it for the recipe.
Whole chilly : Whole kashmiri and betki chilly. If bekti chilly is not available, use some ref chilli powder to spice up the dish.
Whole spices : coriander seeds, cumin seeds, methi seeds, cloves and black peppercorns.
Ghee : use a good brand's Pure desi ghee for more flavour.
Onion : a medium size onion finely chopped.
Garlic : 10 to 15 for the masala paste and half tablespoon chopped.
Salt : as per the taste.
Coriander leaves : finely chopped for topping the final dish.
Make ahead option
You can make ghee roast masala in large quantities and freeze to use later. This chicken ghee roast masala can be freezed for upto 1month long in a freezer. You can freeze the masala in small portion wise in some containers. And when you require to make chicken ghee roast , just bring the masala out and mix to make chicken ghee roast.All you need is to marinate the chicken pieces with yoghurt, salt and chill powder.
Kashmiri chilly is used to give the distinct red color appearance and bedki chilly for spiciness (hot).

Ghee roast masala
This is the masala used to cook the chicken. And it is extremely easy to make this masala at home. A perfect ghee roast masala can give you a yummy and delicious chicken ghee.
Ingredients for the masala
- Kashmiri chilly whole
- Bedki chilli whole
- Small handful of curry leaves
- Coriander seeds
- Cumin seeds
- Whole black pepper
- Fennel seeds
- Cloves
- Garlic clove
Preparation
Remove the stems from kashmiri and bedki chilli and dry roast them for two minutes. Remove and keep aside.
In that same pan dry roast the coriander seeds, cumin seeds, black pepper, cloves and fennel seeds for one minute. Remove and mix them with roasted chillies. Add curry leaves and garlic cloves with them.
Grind them into a fine paste using little water. This how you can make ghee roast masala.
In some typical Shetty kitchen's tandoori chicken is used to make chicken ghee roast. It taste much better as chicken pieces are marinated and roasted over tandoor and then roasted with ghee and curry leaves.
Steps to make the recipe
Making ghee roast masala
Dry roast both the chilly whole and the whole spices separately on a kadai or pan in medium heat flame for one or two minutes. Remove and let them cool down completely.
In a bowl add the chilly whole, dry spices, garlic cloves and half of the curry leaves.
Now grind them into a fine paste using a grinder or mixer. Add water as required. The paste shouldn't be too watery.
Cooking the chicken
Now take a pan and heat ghee in medium heat flame. When the ghee become hot add chopped garlic. Saute for a while. Then add the chopped onions and fry till translucent.
Add the remaining curry leaves and fry with onion garlic till light brown. Now add the prepared ghee roast masala and cook for two to 3 minutes.
After that add the chicken pieces with the ghee roast masala. Mix well so that chicken pieces are well coated with the masala.
Pour water and salt and cook the chicken pieces till done.
Now increase the heat of the flame and stir continuously to dry up the chicken mixture. Pour lemon juice over the chicken and give a final mix. Remove and sprinkle with Cilantro leafs and serve hot.

- 250 gm chicken leg boneless pieces
- 50 gm kashmiri chilly whole
- 30 gm bedki chilly whole
- 1 handful bunch of curry leaves
- 3 teaspoon coriander seeds
- 1 teaspoon cumin seeds
- 1 teaspoon black pepper whole
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon cloves
- 10 - 15 garlic cloves(pods)
- 1/2 cup chopped onion
- 1 teaspoon chopped garlic
- 2 tablespoon pure ghee
- 1/2 tablespoon lemon juice
- Chopped coriander for garnished
- Salt as per taste
- Remove the stems from Kashmiri and betki chilly and dry roast in a pan for 2 minutes in slow flame.
- Similarly dry roast the whole spices, cumin seeds, coriander seeds, fennel seeds, cloves and black pepper for 1 minute.
- Mix the whole spices with the chillies and add the garlic cloves and half of the curry leaves.
- Grind them into a fine paste using little water. Don't make the paste thin.
Making chicken ghee roast
- Heat 2 teaspoon ghee in a pan over medium flame and saute the chopped garlic.
- Add the chopped onions with the remaining curry leaves and fry till translucent.
- Now add prepared ghee roast masala and cook for 1 minute.
- Add the chicken pieces and mix well with the masala.
- Pour one cup water and salt and cook the chicken pieces till done.
- Increase the flame of the gas and continue stirring the masala to evaporate any excess water.
- Now it become glossy and masaledar, remove and serve hot topping with some coriander leaves.
