To make them crispy you can either use corn flour or rice flour. Here in this recipe I have used corn flour to coat them. This Chicken fry with corn flour gives you the perfect crispiness.

When the word juicy comes , you need to put some extra efforts. You need a good proper marination process for your chicken to be juicy.
You need good natural tendering agent like lemon juice, yoghurt(curd) in your marination.

- Go for two marination process, first with salt, lemon juice and ginger garlic paste. And marinated for at least 30 minutes.
- And second one with yoghurt and other spices and leave it for overnight
- When frying don't overcook the chicken pieces otherwise they will become dry.
- There is another marination process used in southern City, a traditional method used to make chicken pieces juicy. They soak chicken pieces in buttermilk for overnight. These helps it tender and moist on inside and also help to coating stick to chicken pieces. These fried chicken are called southern fried chicken.
Steps to make chicken fry
Marinating
Now marinate the chicken pieces with lemon juice, salt,ginger garlic paste for 30 minutes. This is first marination process.
Lemon juice is a good tendering agent and help to make the chicken pieces soft and juicy.
After the marination time, mix red chilly powder, cumin powder, coriander powder , turmeric powder, salt, black pepper powder and red chilly paste with the chicken pieces. Due to the use red chilly paste ( Kashmiri red chilly paste) we get the distinct red colour for our fry chicken.
Then add the yogurt, gram flour and corn flour with the chicken . Mix all ingredients properly to coat the chicken pieces evenly from all sides.
Additionally you can mix fried curry leaves as well with them to give a distinct aromatic flavour. I personally love to mix some fried curry leaves with them and they taste amazing .
Now let the chicken pieces refrigerated for about 2-3 hours to absorb all the flavours.
You can even fry the chicken after 30 minutes but for best results fry them after the said time.

Now heat oil in a deep vessel pan or kadai in medium flame. When the oil become hot add the chicken pieces one by one into the oil.
Keep the flame of the fire in slow flame and fry them till crisp golden for about 7- 8 minutes.
You can observe that the chicken pieces slowly start to float . And that is a sign that the chicken pieces are cooked .
Don't overcooked them otherwise the chicken pieces would become dry. Remove them in a tissue paper to absorb the excess oil.
Sprinkle some chat masala and lemon juice over them and serve hot the fry chicken.

Ingredients
• 250 gm chicken pieces ( with bone)• 1/2 teaspoon ginger paste
• 1/2 teaspoon garlic paste
• 1 teaspoon black pepper powder
• 1 teaspoon red chilly paste ( for color)
• 1 teaspoon red chilli powder ( paprika)
• 1 teaspoon ground cumin( jeera)
• 1/2 teaspoon ground Coriander
• 1/2 teaspoon turmeric powder (haldi)
• 2 teaspoon lemon juice
• 3 teaspoon gram flour (chickpea flour)
• 2 teaspoon corn flour
• 2 teaspoon yoghurt (curd)
• 1/2 salt or as per taste
• Cooking oil for deep frying
How to make the recipe
Preparation
1. Cut the chicken pieces into small bite
size and wash nicely.
2. Pat them dry completely using kitchen
towel or paper.
3. Now mix half of the ginger garlic paste,
lemon juice and salt and let them 30
minutes to marinate.
4. After the marination time mix red chilli
powder, black pepper powder, turmeric
powder, cumin powder, coriander
powder, red chilly paste and salt with
the chicken pieces.
5. Add the chickpea flour, yoghurt and
corn flour with the chicken pieces.
6. Mix everything nicely so that all pieces
are coat evenly with the masala.
7. Keep them marinated for 2 - 3 hours to
absorb all the flavours.
Making the chicken fry
1. Heat oil in a deep vessel pan or kadai inmedium flame. When become hot add
the chicken pieces one by one carefully.
2. Lower the flame of the gas to low and
fry the chicken pieces for 7 - 8 minutes
till crisp golden.
3. The chicken pieces slowly start to float
over the oil. This indicates that the
chicken are cooked.
4. Remove them in tissue paper to absorb
excess oil.
5. Sprinkle some chat masala and lemon
juice and serve hot.

- Boneless chicken and chicken breast pieces can easily be used to make it.
- For the best result you can marinate it in buttermilk for overnight along with some seasoning. The chicken pieces become more tender and juicy.
