More use of these ingredients are not good for our health and heart for a long period of time.

This is an easy stuffed chicken breast recipe where spiced bell pepper slices are stuffed inside the chicken breast slices to make a roll. These are then grilled and baked and serve hot.

Ingredients
  • 2 pieces of chicken breasts
  • 1 red, green and yellow bell peppers
  •  Salt as per taste
  • 1 teaspoon black pepper powder
  • 2 teaspoon olive oil
  • 1 teaspoon chopped garlic
  • 1 teaspoon lemon juice
How to make the recipe
  1. Cut the chicken breast into thin slices making three slice from one breast.
  2. Cover each slice with a plastic bag and hammer them carefully.
  3. Take them in a mixing bowl and add small amount of salt, 1/2 teaspoon black pepper powder, chopped garlic and 1/2 teaspoon olive oil.
  4. Keep them marinated for 10 minutes. 
  5. Similarly cut the bell peppers and make thin slices removing inner part from them.
  6. Apply salt and remaining pepper powder.
  7.  Heat a pan with half teaspoon olive oil and saute the bell peppers for a minute. Remove and keep to cool down.
Making the stuffed chicken
  1. Spread one marinated chicken slice over a chopping board and place another slice on its tip.
  2. Now place the sauteed bell peppers one each coloured one after another over the chicken slices.
  3. Start to fold the chicken slices tightly covering all the bell peppers inside it and make a roll.
  4. Insert a toothpick to hold everything into the roll.
  5. Repeat with the remaining chicken slices and make more roll.
  6. Heat 1/2 teaspoon oil in a pan on medium flame heat and grill the chicken roll from all sides for 1 or 2 minutes. 
  7. Preheat a oven at 240°C for 15 minutes and line a baking tray with aluminum foil.
  8. Place the pan grilled chicken breast roll over the tray and bake for 10 minutes to done.
  9. Remove and cut them to serve.

                  Serving tips
• You can serve them with any souce of your choice. Tartar sauce or tomato salsa are good to serve with them.
• Cilantro mint sauce is another good option to serve with it.

Preparation
 1  Slice both the Chicken breasts  into lengthwise using a knife. Make three thin slices from each chicken breasts.
2. Now hammer the slices slowly. Don't over hammered  otherwise they will break down. You can keep a plastic bag over the slices and hammer them.
3. Take a mixing bowl and  apply salt, 1/2 teaspoon black pepper powder, chopped garlic, lemon juice and olive oil to the chicken slices and keep marinated for 10 minutes in a fridge.
4. Slice the bell peppers  and make them thin by removing inner parts of each bell peppers using a  sharp knife.
5. Apply salt and remaining black pepper powder to the bell peppers and keep aside.

6. Now take a  Non stick pan and heat 1/2 teaspoon olive oil in medium high flame. Then add the bell peppers and saute them in high flame for 1 minute. Remove the bell peppers in a plate and let them cool down completely.
By doing this we are making the bell peppers  soft in texture. Easy to roll them inside the chicken slices.

7. Now take the marinated chicken slices and spread them on a chopping board or working table.
 Arrange the bell peppers over the chicken breasts slices one by one length wise. If the chicken slice become short in length to cover the bell peppers then add another chicken slice over the first one's end.

8. Fold the chicken slice along with the bell peppers tightly to give it a roll size shape,
9.  Repeat with the remaining chicken breast slices and bell peppers to make more rolls. You can pin a tooth pick into the roll for farm shape.
10. Now take the non stick pan and heat the remaining olive oil in slow flame.Grilled the roll shaped chicken breasts from all sides
slowly for 1 minute. This will give a nice colour and smoking flavour to the rolls. Switch off the flame and remove them

11. Now arrange the chicken breasts slices in a baking tray and baked in a preheated Oven for about ten minutes.
12. After finishing the said time, bring them out and cut it into small  pieces.
13. Garnish and serve hot the stuffed chicken roll.
